If I’m at a show I will make this cake and take it along for people to sample. It shows off the flavour of the lemon oil and also demonstrates how you can bake with oil (and get great results!). It’s also really quick and easy.
This is an adapted version of a recipe given to me by my sister-in-law Susan whose Granny it is named after. It’s a great recipe to introduce children to baking and they just love eating the result of their efforts afterwards!

This is my take on Nigella’s Olive oil cake. Having experimented with it I found that you can reduce the amount of sugar considerably without it affecting the bake.
