This is such a useful recipe – stir through pasta, use it as a dip or pizza topping, add a swirl to plain hummus – the list is almost endless.

HUMMUS

A rich and velvety-smooth hummus made from cooking your chickpeas until soft.

WARM PANZANELLA SALAD

A delicious summer salad. A bit fiddly to make but so worth the effort. This recipe is fine to eat at room temperature as leftovers the following day when the herbs have really had time to take hold.

POTATO, TOMATO and KALE

Towards the end of lockdown our neighbours gave us a discount voucher to Hello Fresh and this recipe was one that’s just stuck with me. It’s great on its own or as a side dish with chicken, meat or fish.

PESTO BREAD

This is very more-ish bread! If you’ve never made bread before don’t be put off it’s not hard, it just takes a little time but it is so worth it.

ROAST POTATOES

Everyone has their own way of doing roast potatoes, some people add flour, baking powder or even semolina. The secret to is using a good quality cold-pressed rapeseed oil – and our customers who come to the farm always tell us this!

SIMPLE HASSELBACK POTATOES

As potato farmers we eat a lot of potatoes and we love these hedgehog-like beauties. You can ‘hasselback’ any kind of potato. Having a consistent size of potato (small or medium) is important and then there’s the distance between the cuts!

BOULANGÈRE POTATOES

A lighter version of dauphinoise potatoes but just as crowd-pleasing. The top layers are golden and crunchy and underneath they just melt-in-the-mouth. Named ‘Baker’s Potatoes’ as cooks would take their potato casseroles to the local baker’s ovens to cook.

ROSE HARISSA HASSELBACK BUTTERNUT SQUASH

A  fab dish when cooking for vegetarians or as a side dish to a piece of steak. The Middle Eastern flavours from the rose harissa are so good. This is adapted from a recipe by Janine Ratcliffe, Food Director at Olive Magazine.

BROCCOLI SALAD

In Fife, where my parents live, Broccoli salad is a bit of a ‘thing’ – a lot of broccoli is grown in the area – and I love it. This is a really easy recipe which can be adapted to take some feta or sun dried tomatoes if you wanted to give it a twist.

MAYAN GOLD LYONNAISE POTATO CAKE

When you are married to a potato farmer and enjoy cooking you tend to have a lot of potato recipes up your sleeve. This is adapted from a Michel Roux recipe and is an excellent side dish for your Christmas meal or a special occasion.
