GRANNY JEAN MILLER’S PANCAKES

Ingredients:

8 oz self-raising flour
2 oz caster sugar
½ tsp bicarbonate of soda
1 tsp baking powder
½ tsp salt (optional)
1 oz of Seabanks rapeseed oil
2 tbsp golden syrup
3 eggs beaten
1 cup of milk

Method:
  1. Heat up the girdle. I’m very fortunate to cook on an Aga using a very well-seasoned girdle belonging to my grandmother but you can get really good pancake pans which work just as well on hobs and gas cookers.
  2. Put all the dry ingredients into a large mixing bowl. In another bowl add the rapeseed oil and the syrup. Add the milk to the beaten eggs.
  3. Mix the egg/milk mixture into your dry ingredients and when well combined add the oil and syrup. If the batter is too thick add a little more milk then make your pancakes!
