All of these recipes are family favourites in our house. Rapeseed oil is great to bake with so you’ll find cake, muffin, pancake and bread recipes here and when it comes to savoury cooking using rapeseed oil in place of olive, sunflower or coconut oils couldn’t be simpler – you’ll be amazed by the results and your food will be healthier too!

GRANNY JEAN MILLER’S PANCAKES

This is an adapted version of a recipe given to me by my sister-in-law Susan whose Granny it is named after. It’s a great recipe to introduce children to baking and they just love eating the result of their efforts afterwards!

CLASSIC PESTO
This is such a useful recipe – stir through pasta, use it as a dip or pizza topping, add a swirl to plain hummus – the list is almost endless.
EASY VICTORIA SPONGE
This recipe was kindly given to me by David and Alice of Northumbrian Pantry (www.Northumbrianpantry.co.uk). One of their delicious jams is all it needs as a filling and the cake keeps well (better than a cake made of butter in my opinion).
HUMMUS
A rich and velvety-smooth hummus made from cooking your chickpeas until soft.
BANANA LOAF
This easy recipe is great for using up very ripe or brown bananas. You’ll need a 1 litre loaf tin (approx. 21.5cm x 11cm x 7cm).
WARM PANZANELLA SALAD

A delicious summer salad. A bit fiddly to make but so worth the effort. This recipe makes a good big bowlful – it’s fine to eat at room temperature as leftovers the following day when the herbs have really had time to take hold.

MAYAN GOLD LYONNAISE POTATO CAKE

When you are married to a potato farmer and enjoy cooking you tend to have a lot of potato recipes up your sleeve. This is adapted from a Michel Roux recipe and is an excellent side dish for your Christmas meal or a special occasion.
